Pimp your Pancakes

Crepes Suzette

Ingredients

  • 4 pancakes
  • 100g butter
  • 100g gaster sugar
  • Grated rind of 1 orange
  • Juice from 1 orange
  • 4 teaspoons brandy, warmed

Method

Cream the 80g of the butter with the sugar, and beat in the orange rind and juice. Spread over the pancakes.

Melt the remaining butter in a frying pan. When foaming, add the pancakes in a single layer.

Cook for about 30 seconds, turn and cook the other side.

Pour over the brandy and ignite. Serve once the flames have died down.
